Classic Pesto recipe
This traditional pesto calls for only the basics -- basil, Parmesan cheese, pine nuts, and olive oil. Since the beauty of a good pesto is in its simplicity, use the best quality ingredients you can find: fresh herbs and cheese and a high quality olive oil will make this classic dish classically unforgettable.
Makes about 1 cup.
Ingredients List:
4 cups fresh basil leaves, torn
½ cup freshly grated Parmesan cheese
¼ cup pine nuts
2 garlic cloves, crushed
½ cup extra-virgin olive oil
½ teaspoon sea salt
¼ teaspoon fresh black pepper
Directions:
1. Place basil, cheeses, pine nuts, and garlic in a food processor. Pulse several times, until well chopped.
2. With machine running, slowly add olive oil in a steady stream, allowing pesto to mix blend and become cohesive. Process until desired consistency is reached, season with salt and pepper, and serve.
